BIANCOLILLA: )It is the most widespread variety in Sicily. With the name “Biancolilla” identified several genotypes that find their largest concentration in the province of Agrigento, where in some council district it reaches more than 90%, and Trapani. A strong sturdy vigorium plant, it has a high yield although, there is alternation from a medium oil yield to low. The oil has a fruity sensation of bitter and spicy especially if the fruit is harvested very mature and if it comes from higt altitude. It is characterized by the scents of freshly picked green olives and hint of artichokes.
 
CERASUOLA: Variety of western Sicily, where it reaches the maximum expansion in the territory of town of Sciacca. Plant of medium vigor, with a fruit of average size that is used mainly for producing oil, whose organoleptic characteristics vary in relation to the soil and the environment. The fruit is the medium size and is used primarily for producing oil, whose organoleptic characteristics vary in relation to land, crop anvironment, and especially regarding the ripeness of the drupes. It presents a profile of fruity bitter and spicy-intense with scents of freshly cut grass, thistle and artichoke.
 
NOCELLARA DEL BELICE: Cultivars widely grow in south-eastern Sicily, especially in the uplands of ibleo which comprises the provinces of Siracusa and Ragusa. It is a highly vigorous plant with a tendency to grow in height, high productivity, low yield and a media alternation in oil. Refers to the category of intense fruitiness, with a predominance of spicy bitter hints. It can give sensations of almond and tomato leaves, in the stages of maturation.
 
TONDA IBLEA: cultivars grown in Sicily South- Eastern Europe, especially in the Iblean Mountains between the province of Siracusa and Ragusa.
Plant of high vigor with erect posture, high productivity, low alternating and a low yield of oil.
Refers to the category of intense fruitiness, with a predominance of spicy note of that bitter with hints of green tomato.
